Superfood Parfait Recipe

Serves 2
For 1 layer of filling:1 Tbsp. protein powder
3 to 4 dates, pitted (or 1 banana)
2 cups strawberries and/or raspberries
1/2 cup canned coconut milk, chilled
For other layers of filling: Mixed nuts, seeds, fresh berries, coconut shreds and/or yogurt
Add the ingredients for the first layer to a blender and puree until smooth. Place a spoonful of the mixture in a glass, then cover with nuts, seeds, fresh berries, coconut and/or yogurt; continue layering until the glass is full.
