Apple-Sage Chicken Sausage Recipe
Photo: Ashley Pettit
Makes 24 patties
1 lb. ground chicken breast (white meat)
1 small Golden Delicious apple, peeled, cored and shredded
1 Tbsp. sage, finely chopped
3 Tbsp. pure maple syrup
1/4 tsp. allspice
1 tsp. sea salt or Himalayan crystal salt
1/4 tsp. pepper
1 large egg, beaten
2 tsp. extra-virgin olive oil
Mix all of the ingredients together in a large bowl. Form the mixture into patties.
Heat the oil in a large skillet for 30 seconds, then add the patties (you may need to cook them in 2 batches). Cook roughly 10 minutes, flipping halfway through (a meat thermometer should register 160 degrees in the middle of a patty).
Note: You can freeze leftovers for up to 2 weeks.
