An Alternative to the Usual Pizza for Breakfast
This cheesy, A.M.-appropriate "pizza" comes together in about 20 minutes, which is just one reason we love it. The other is that it uses a sheet pan to combine two beloved comfort foods: egg-and-cheese sandwiches, and French bread pizza. The recipe, from Mary Younkin's new The Weekday Lunches & Breakfasts Cookbook, takes advantage of the sheet pan's low rim to contain a baguette or other loaf, sliced in half and sprinkled with Monterey Jack (the pan's edges will ensure the bread won't slide off). Next, just barely scramble some eggs—you don't want them too dry—and scoop them onto the bread. Top with more cheese and bake for about 5 minutes, and you've got a delicious and filling morning meal.
