Serves 1


  • 1/2 cup old-fashioned oats
  • 3 or 4 egg whites
  • 1/4 of an apple, grated
  • Cinnamon, to taste
  • Fresh berries, for serving
  • Cooking spray


    Mix all ingredients together in a medium bowl. Let sit for 5 to 10 minutes.

    Heat a nonstick pan over medium heat and coat with cooking spray. Ladle spoonfuls of batter onto the pan, and flip when they start to bubble. Cook until the bottoms are golden, then remove from heat.

    Serve with fresh berries.
