The best thing about this dinner? You can get it started during your commute home. If your kids are old enough, teach them how to turn the oven to 450 and to put the potatoes in before the oven gets hot.

Serves 4

Ingredients


  • 6 baking potatoes (or 1 1/2 potatoes per diner)
  • 6 pieces good-quality bacon, cooked
  • 4 ounces cheese, such as cheddar, feta or Parmesan
  • 1 head of broccoli, cut into florets and steamed
  • 1 6-ounce bag fresh spinach, sautéed in olive oil with garlic (or in a little bacon fat after the bacon has been cooked)
  • 2 large onions, sliced and cooked in olive oil on low heat for 15 to 20 minutes, until caramelized
  • Sour cream
  • Unsalted butter
  • Ketchup

    Directions


    Preheat oven to 450° F.

    Put the potatoes in the oven and bake for 45 minutes to an hour, depending on the size of the potatoes.

    While the potatoes are baking, prepare the desired toppings.

    Remove the potatoes from the oven, split them open and top with the desired cheese. Broil them until the cheese is melted, then top with the desired add-ons. Try to make the vegetables nonnegotiable.
