Pound Cake Recipe

Serves 24
Ingredients
Nonstick cooking spray
1 pound (4 sticks) butter
1 pound (2 cups) sugar
10 eggs, separated
1 pound (3 1/3 cups) all-purpose flour
2 Tbsp. brandy
Directions
Preheat the oven to 350°. Spray a Bundt pan or 9" x 5" loaf pan with cooking spray and set aside.
In the bowl of a stand mixer or using a handheld mixer, cream butter and sugar on medium-high speed until light and fluffy, 3 to 5 minutes.
Add the egg yolks one at a time, beating between each addition, until thick and lemon colored.
In a large bowl, beat the egg whites on high speed until stiff peaks form.
Add the flour, egg whites and brandy to the butter mixture, beating vigorously for 5 minutes.
Bake for 75 minutes, or until a skewer inserted into the center of the cake comes out clean.
