Serves 2

Ingredients

  • 1 bunch kale (curly green or red tend to work best)
  • 2 Tbsp. extra virgin olive oil
  • Freshly ground black pepper

Directions

Place a baking sheet in the oven and preheat to 375°F.

Thoroughly rinse and dry the kale. Tear out and discard the stems. Rip the leaves into even-size pieces and place in bowl. Pour the olive oil on top and mix with your hands to combine, massaging the kale while doing so in order to reduce the toughness of the leaves. Add pepper to taste.

Remove the baking sheet from the oven and spread the kale in an even layer. Return the sheet to the oven and bake 10 to 15 minutes, turning over the kale pieces once, halfway through.

Cool on the baking sheet on a wire rack and enjoy.
