Orecchiette with Sausage and Broccoli Recipe

Serves 4
1 Tbsp. olive oil
1 pound sweet Italian sausage, removed from casing
2 cups broccoli florets, cut into bite-size pieces
1 pound orecchiette, shells or other cut pasta
2/3 cup grated Parmesan cheese
Salt and pepper, to taste
Bring a large pot of salted water to boil.
Heat oil in a skillet over medium heat and add sausage, stirring with a wooden spoon to break it up. While the sausage cooks, add the broccoli to the boiling water and cook for 3 minutes. Remove with a slotted spoon and bring the water back to a boil. When the sausage has browned, after about 5 minutes, add the broccoli and stir to combine. Season with salt and pepper.
Add the pasta to the pot of boiling water and cook until al dente. Drain, reserving about a cup of the pasta water, and add the pasta to the sausage and broccoli. If it seems dry, add some of the pasta water, a few spoonfuls at a time. Stir in Parmesan and serve.
