Serves 2


  • 2 cups coarsely chopped kale
  • 1/2 cucumber, cut into chunks
  • 1/2-inch piece of peeled ginger
  • Juice from half a lime
  • 3 to 4 fresh mint or basil leaves
  • Half of a Granny Smith apple, cored and cut into chunks
  • Additional 2 or 3 julienned mint or basil leaves, for garnish
  • 1 Tbsp. hemp seeds, or to taste, for garnish


    In a blender, add kale, cucumber, ginger, apple, lime juice, mint or basil, 5 ice cubes and a dash of water. Process until smooth, pour into bowls and garnish with mint or basil and a sprinkling of hemp seeds.
