Serves 4


  • 4 chicken thighs
  • 2 tsp. chopped fresh oregano
  • 2 tsp. chopped fresh thyme
  • 2 tsp. chopped fresh rosemary
  • 1 Tbsp. lemon juice
  • 1 Tbsp. olive oil
  • 2 tsp. chopped garlic
  • 1/2 tsp. salt
  • 1/4 tsp. pepper


    Preheat broiler to high and place rack in top position. Place a Silpat or silicone baking liner on top of a rimmed baking sheet.

    In a small bowl, mix together herbs, lemon juice, oil, garlic, salt and pepper.

    Gently loosen the chicken skin with your finger and slide about a quarter of the herb mixture underneath. Repeat for the other three thighs. Season both sides of all the chicken with additional salt and pepper, to taste.

    Lay chicken on prepared sheet, skin-side down, and broil for 5 minutes. Flip and continue cooking for 6 to 8 more minutes, until skin is crispy and chicken is cooked through.
