Burrito Scramble Recipe
If you're a sucker for a shortcut, try this tangy, cheesy egg dish from Lauren K. Stein's Fresh Made Simple, which barely requires a knife.

Serves 1
Pat of butter
Handful of canned black beans, drained
6" tortilla, torn up (corn is best, but flour works, too)
2 eggs
Pinch of salt and pepper
Store-bought pico de gallo, for topping
Chopped scallion, for topping
Shredded cheddar, for topping
Dollop of plain Greek yogurt, for topping
Total time: 5 minutes
In a medium skillet, melt butter and add black beans. Add torn tortilla to skillet, and cook about 1 minute. Crack eggs into mixture, add salt and pepper and scramble eggs until cooked through. Top with pico de gallo, scallion, cheddar and Greek yogurt.
