Serves 1


  • Pat of butter
  • Handful of canned black beans, drained
  • 6" tortilla, torn up (corn is best, but flour works, too)
  • 2 eggs
  • Pinch of salt and pepper
  • Store-bought pico de gallo, for topping
  • Chopped scallion, for topping
  • Shredded cheddar, for topping
  • Dollop of plain Greek yogurt, for topping


    Total time: 5 minutes

    In a medium skillet, melt butter and add black beans. Add torn tortilla to skillet, and cook about 1 minute. Crack eggs into mixture, add salt and pepper and scramble eggs until cooked through. Top with pico de gallo, scallion, cheddar and Greek yogurt.
