Bark is the easiest of all candy to make. After you temper the chocolate, the task is quickly accomplished with a little stirring, spreading, and scattering. An elegant, flavorful dessert is created without ever turning on the oven!

White Chocolate–Orange–Almond Bark

Makes: 1 1/2 pounds
    11⁄2 pounds good white chocolate, tempered
    1 cup (1 ounce) unsweetened puffed-rice cereal, such as Rice Krispies
    1 cup (41⁄2 ounces) roughly chopped slivered almonds, toasted
    1 cup (7 ounces) candied orange peel, chopped into 1⁄4-inch pieces

Directions

Place the tempered chocolate in a large mixing bowl. Stir in the cereal and mix.

Working quickly using an offset spatula, spread the mixture on the prepared pan and scatter the almonds and candied orange peel on top, pressing lightly. Allow the bark to harden, which takes about 10 minutes at a cool room temperature. Break the candy into irregular bite-sized pieces and serve. Store in an airtight container for up to 1 week.
