This dip is deceptive; it tastes so rich that it is hard to believe it’s just low fat yogurt and nut butter. Add a touch of sweetener and a hint of vanilla, and it is the perfect after-school snack. Tart apples and salty pretzels are the perfect complement to enjoy it with!

Creamy Crunchy Nut Butter Dip

Makes 3 cups
    2 cups reduced fat Greek yogurt
    1 cup natural nut butter—almond, peanut, or cashew
    4 tablespoons maple syrup or honey
    1 tablespoon vanilla extract
    1⁄2 cup (21⁄2 ounces) chopped nuts (almond, peanut, or cashew)
    Sliced apples or bananas


Combine the yogurt and the nut butter in a small mixing bowl and stir well. Mix in the maple syrup, vanilla, and nuts and serve immediately with apples and bananas. Wrap any leftovers in an airtight container and refrigerate for up to 1 week.
