Sweet Potato and Chicken Sausage Hash Recipe

Serves 4
2 medium sweet potatoes or yams, cut into 1/2-inch cubes
1 vidalia onion, roughly chopped
1/2 pound chicken sausage, sliced lengthwise then widthwise
1 red pepper, roughly chopped
3 Tbsp. olive oil
1 tsp. salt
Preheat the oven to 425°.
Add all the dry ingredients to a cookie sheet lined with foil. Drizzle the olive oil and mix well with your hands so that everything is well covered in the oil. You want the onion, sausage and red pepper to be larger than the yams, which take longer to cook. Roast in the oven for an hour, turning a couple of times, until the vegetables are caramelized and cooked through.
