The 2-Step Pork Chop
It's easy to overcook pork, but using this smart method can prevent that from happening. You coat bone-in chops with a simple garlic-herb mixture, quickly sear them at high heat on the stove top (which gives them a crisp exterior) and then finish them in the oven, where they will continue to cook, but without the blasting heat of the stove top, so the meat will stay tender and juicy. Throw a few lemon halves on the pan, and the heat will make it easier to squirt the juice over the pork when it's ready.
