Spicy Steak Skewers Recipe
A fabulous, simple-enough-for-a-Wednesday recipe using three staples: Scallions, yellow squash and jalapeño.

Serves 4
1/4 cup olive oil
3 jalapeños
1 3/4 pounds sirloin, cut into 1" chunks
4 (4-ounce) yellow squash
1/4 cup chopped mint, cut into 1"-inch thick half-moons
4 scallions, cut into 2" pieces
3 (1"-thick) slices peasant bread, cut into 1 1/2" chunks
3 Tbsp. olive oil
3/4 tsp. salt
3/4 tsp pepper
1/2 cup crumbled blue cheese
Total time: 2 hours 40 minutes
In a medium bowl, combine vinegar, ¼ cup olive oil and 1 jalapeño, seeded and finely chopped.
In a large bowl, coat sirloin with all but 3 Tbsp. of the balsamic mixture. Marinate at least 2 hours. Preheat grill on medium-high heat.
On a baking sheet, arrange yellow squash, scallions, 2 jalapeños, seeded and halved, and peasant bread. Brush with 3 Tbsp. olive oil.
On 8 (14" to 16") metal skewers, thread ingredients. Season with salt and pepper.
Grill until beef is medium rare, 2 minutes per side. Stir crumbled blue cheese into the remaining balsamic mixture and drizzle over skewers.
