Serves 1


  • 1 egg
  • Handful of fresh spinach
  • 1 tsp. cocoa nibs; or, to taste
  • Salt, to taste


    Fill a coffee mug with very cold water and gently crack the egg into it. Microwave for 1 minute for a runny yolk; or, longer if you prefer it more solid. Remove mug from the microwave and set aside.

    Place spinach in a bowl and cover with a plate; microwave 30 seconds to 1 minute, until the leaves are wilted.

    Lift the poached egg out of the water with a slotted spoon, lay it over the spinach and sprinkle cocoa nibs and a little salt on top.
