Mason-Jar Quiche Lorraine Recipe

Serves 1
Nonstick spray
2 eggs
2 Tbsp. milk
1/4 cup shredded Gruyère cheese
Pinch of nutmeg
Salt and pepper, to taste
1 slice of ham, cut into thumbnail-size pieces
Directions
Coat the inside of a mason jar with nonstick spray. Crack eggs into the jar, add milk, cheese, nutmeg and salt and pepper, to taste. Cover the jar with a piece of plastic wrap, then screw on the lid and shake well. Remove the lid but keep the plastic wrap on and microwave for 1 minute. Carefully take the jar out of the microwave, using a pot holder, then remove the plastic and gently stir the eggs with a fork. Leaving the plastic off, microwave the eggs for 30 seconds more, then stir in the ham, let cool slightly and serve, or replace the lid and eat later.
