If you can’t find focaccia, substitute ciabatta rolls and brush olive oil on the cut sides.

Makes 4 sandwiches


  • 4 pieces focaccia
  • 1/2 cup pesto
  • 1 pound turkey, sliced thinly
  • 1/4 pound Genoa salami, sliced thinly
  • 1 cup roasted red peppers, drained
  • 4 thick slices mozzarella
  • 1 cup arugula


Total time: 15 minutes

Preheat broiler with oven rack in the center. Slice focaccia lengthwise and spread pesto on bottom half. Layer turkey, Genoa salami, red peppers, and mozzarella on focaccia bottoms. Place on a baking sheet and broil until golden and bubbly, about 5 to 7 minutes. Add arugula and focaccia tops and serve.
