Italian Turkey Melt Recipe

If you can’t find focaccia, substitute ciabatta rolls and brush olive oil on the cut sides.
Makes 4 sandwiches
Ingredients
- 4 pieces focaccia
- 1/2 cup pesto
- 1 pound turkey, sliced thinly
- 1/4 pound Genoa salami, sliced thinly
- 1 cup roasted red peppers, drained
- 4 thick slices mozzarella
- 1 cup arugula
Directions
Total time: 15 minutesPreheat broiler with oven rack in the center. Slice focaccia lengthwise and spread pesto on bottom half. Layer turkey, Genoa salami, red peppers, and mozzarella on focaccia bottoms. Place on a baking sheet and broil until golden and bubbly, about 5 to 7 minutes. Add arugula and focaccia tops and serve.
