Egg and Pancake Sandwich Recipe
In a small bowl, mix the applesauce, 2 of the eggs, the baking powder and protein powder with a fork until just combined.
Heat a large nonstick skillet over medium heat and coat the pan with cooking spray. Cook 8 silver-dollar-size pancakes until the edges are just set and bubbles begin to form in the pancakes, about 90 seconds. Flip the pancakes and cook another 30 to 45 seconds.
In the same pan, cook the remaining 4 eggs over-easy. Place an egg on each of the 4 pancakes and top with the remaining pancakes. Drizzle the coconut nectar on top and allow it to absorb for 1 minute before eating.
