Bacon-Parmesan Biscuits Recipe

A fabulous, great-for-guests brunch dish that features three staples: Bacon, Parmesan and spinach.
Serves 4
Ingredients
- 2 cups spinach
- 1 tsp. water
- 4 thin slices bacon
- 1½ cups all-purpose flour
- 1 tsp. baking powder
- ½ tsp. salt
- ¼ tsp. pepper
- ¼ tsp. baking soda
- 4 Tbsp. chilled butter
- ¼ cup grated Parmesan
- ½ cup plus 1 Tbsp. milk

In a skillet over medium-high heat, cook spinach with 1 tsp. water until wilted, 30 seconds. Transfer to a colander; squeeze out water and finely chop. Wipe out skillet. Cook bacon until crisp; finely chop.
Preheat oven to 400°. In a bowl, whisk together all-purpose flour, baking powder, salt, pepper and baking soda. With a pastry cutter, cut chilled butter into flour mixture. Stir in spinach, bacon and grated Parmesan, then milk until just incorporated.
On a floured surface, press mixture to form dough into a ¾-inch-thick rectangle. Cut 8 small rounds and arrange on a greased baking sheet. Brush milk on tops and sprinkle with Parmesan. Bake until golden, 10 minutes.
