Serves 2


  • 4 slices hearty grain bread, toasted
  • 3 small heirloom tomatoes, sliced
  • 1 tsp. sesame seeds
  • 1/3 cup crumbled feta cheese
  • 1 lemon, quartered
  • 1 avocado, sliced
  • Salt and pepper, to taste
  • Olive oil, for drizzling


    Layer about a quarter of the avocado slices on a slice of toast and mash with a fork. Top with a quarter of the tomato slices and squeeze the juice of one lemon quarter over the tomatoes. Sprinkle with a quarter of the sesame seeds and a quarter of the feta. Drizzle olive oil and sprinkle salt and pepper over the sandwich.

    Repeat with remaining ingredients.
