Avocado-Tatziki-Tortilla Roll-Up Recipe

Serves 10 to 15
3 avocados
1 small (8-ounce) jar of store-bought tzatziki
1/2 cup chopped cilantro
1 tsp. minced red onion
10 slices pepper Jack cheese
1 tsp. ground cumin
Salt, to taste
10 tortillas
For the garnish: 1/2 onion, thinly sliced
2 tsp. chopped cilantro
1/2 cup sour cream
2 limes, cut into quarters
Preheat oven to 350°.
Chop the avocados, cilantro and red onions as small as possible. In a medium bowl, mix them with the tatziki and season with the cumin and salt to taste.
Place a slice of cheese on a tortilla and top with about 2 tablespoons of the avocado mixture. Roll the tortilla up as tightly as you can (to resemble a flauta) and place on a tray lined with parchment paper. Continue with the 9 remaining tortillas. Bake the roll-ups for 5 minutes, or until cheese has melted.
Cut each tortilla roll into 3/4-inch slices and arrange on a platter, cut side-down and garnished with onion, cilantro, sour cream and limes.
