This homemade gourmet twist on the classic tuna sandwich from chef and founder of Lemonade Alan Jackson, will brighten up your workday and make all of your coworkers jealous when you pull it out for lunch.
Serves 2

Classic Tuna Nicoise

    1 can oil packed tuna
    1/2 cup chopped green beans
    1/2 cup sliced red onions
    1/2 cup pitted Kalamata olives
    2 hardboiled eggs
    1/2 can chickpeas
    1/3 cup olive oil
    1/2 lemon squeezed
    salt and ground black pepper to taste


Combine all ingredients in a bowl and toss together. Serve immediately or store in the refrigerator then enjoy!
