The perfect soup for a summer’s day, this favorite will actually lower your body temperature! Jesse Brune, chef on Home Made Simple created this simple dish to serve all summer long.
Serves 4

Ingredients

    2 english cucumbers peeled and chopped in 1” rounds
    2 cloves garlic, peeled
    3 green onions, chopped
    1 cup spring water
    1/4 cup lemon juice
    1/2 cup plain greek yogurt
    1/4 cup cilantro, lightly chopped (optional)
    Sea salt to taste
    Black pepper to taste
    Lemon zest (for garnish)

Directions

Place all ingredients in a blender or food processor. Blend until it is a smooth consistency. Add black pepper and salt after blended to taste. Garnish with Lemon zest and serve!
