White Beans with Rosemary, Chopped Tomatoes and Olive Oil Recipe
Serve alone or with celery slices and carrot sticks for an appetizer that will impress!

2 tablespoons extra-virgin olive oil
15 ounces (one can) white beans, drained and rinsed
2 teaspoons chopped fresh rosemary
1 plum tomato, seeded and finely chopped
1/2 teaspoon salt
Grated Parmesan, to taste (optional)
In a medium bowl, combine white beans, rosemary, plum tomato, extra-virgin olive oil and salt. Sprinkle with grated Parmesan, if using.
