Ingredients


  • 2 tablespoons extra-virgin olive oil
  • 15 ounces (one can) white beans, drained and rinsed
  • 2 teaspoons chopped fresh rosemary
  • 1 plum tomato, seeded and finely chopped
  • 1/2 teaspoon salt
  • Grated Parmesan, to taste (optional)

    Directions


    In a medium bowl, combine white beans, rosemary, plum tomato, extra-virgin olive oil and salt. Sprinkle with grated Parmesan, if using.
