Strawberry Frosting Recipe

Heather "Cupcakes" Saffer, author of The Dollop Book of Frosting and winner of Food Network's Cupcake Wars, makes her own strawberry frosting (it's hard to beat the sweet-tart flavor of fresh berries) to pair with her Strawberry-Frosted Limoncello "Shortcakes" recipe.
Makes enough frosting for about 1 dozen biscuits
Ingredients
- 1 cup unsalted butter, softened
- 1 Tbsp. pure vanilla extract
- 3 cups 10x powdered sugar
- 1/8 tsp. salt
- 4 fresh small strawberries, diced (If your strawberries are larger, add less. If you add too many strawberries, the juice will cause the frosting to congeal, so be careful.)
Directions
In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy, about 2 minutes.
Add vanilla and continue mixing an additional minute. Add sugar and salt slowly, and beat until light and fluffy, about 3 minutes. Add diced strawberries and continue mixing until mixture is light, pink and fluffy.
