Soup's On

Since she was a child, there's one dish Oprah has enjoyed nearly every day. "Soup...whether it's a light broth, a chunky chili or a just-plain-perfect tomato puree, it fills me with a sense of well-being and feels, always, like comfort in a bowl," she writes in O, The Oprah Magazine.

An Honest-to-Goodness Midday Meal
"I've never met a tomato soup I didn't like," Oprah says. And here's one of her favorites that looks rustic, feels rich and tastes, as Oprah puts it, "honest." You can ladle up this soup in a bowl on its own, or serve it with a vibrant garnish of sautéed mushrooms and crumbled, tangy goat cheese.

A Supersmooth Soup with a Smart Secret
Who doesn't love a luxurious creamed soup? Only trouble is, they can sometimes be heavy; and, when you try to lighten them up with low-fat dairy, they become vulnerable to curdling. This creamed cauliflower soup, though, is thickened with potatoes and just a bit of full-fat cream, so it tastes silky without being overwhelmingly rich—and won't curdle as you're cooking.

A Big Bowl of Comfort Food That Combines 2 Beloved Cuisines
This fun recipe puts a Southern spin on the Italian classic pasta e fagioli (that's Italian for "pasta and beans"). The usual suspects are all here—cannellini beans, tubetti pasta, rosemary—but then there are also potatoes, black-eyed peas and smoky ham hock. They may be untraditional additions, but the flavors meld perfectly.

A Broccoli Soup You Never Saw Coming
Cheddar may be broccoli's longtime BFF, but that's not to say the cruciferous veg can't also play nicely with other cheeses. Take, for instance, this thick and delicious soup, which calls on feta to add luscious texture—as well as a welcome brightness that cheddar just can't rival.
