Quinoa-Peanut Butter Energy Bites Recipe

Serves 6 to 8
1/2 cup cooked quinoa
1/4 cup creamy peanut butter
1/4 cup old-fashioned, rolled oats
1/4 cup shaved, unsweetened coconut
1 Tbsp. honey
Optional mix-ins: 1 Tbsp. mini dark chocolate chips, 1/4 cup finely chopped walnuts, 1 tsp. minced, crystallized ginger
Directions
In a medium bowl, stir together all ingredients until well mixed. Using wet hands, form into 6 to 8 balls, depending on how big you'd like them. Place on a tray, cover with plastic and chill until firm. Store in refrigerator.
