This classic comfort food uses leftover turkey, string beans and mashed potatoes from Thanksgiving dinner. And the best part? It only takes 30 minutes to make.

Serves 4


  • 1 Tbsp. vegetable oil
  • 1 1/2 cups mushrooms
  • 1 small onion
  • 1/4 cup dry sherry
  • 2 cups roast turkey
  • 1 cup string beans
  • 1 Tbsp. soy sauce
  • 1 Tbsp. water
  • 2/3 cup heavy cream
  • 2 tsp. fresh sage
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups mashed potatoes
  • 1 Tbsp. cream


Total time: 30 minutes

In a large skillet, heat vegetable oil over medium heat. Add sliced mushrooms and season with salt; cook, covered, until tender, 4 minutes. Add the onion, chopped, and cook until soft, about 3 minutes. Add dry sherry and reduce by half, 1 minute. Add diced roast turkey, diced cooked string beans, soy sauce, water, heavy cream, fresh sage and 1/4 tsp. each salt and pepper; simmer 2 minutes.

Transfer to a baking dish, spread 2 cups mashed potatoes on top, and drizzle with cream. Broil in middle of oven until bubbling, 5 minutes.
