There are many reasons to admire actress and writer Mindy Kaling, but we've got three delicious ones you may not have considered. First, she cooks s'mores on her George Foreman grill ("I like using a device intended for healthy purposes—removing fat from meat—to make junk food," she told O). Second, she calls herself "a master of the breakfast sandwich." And third, she makes a mean—and dare we say, sort-of healthy—lasagna. Mindy, we are in awe.

Earlier this fall, she posted a picture on her Instagram of a meaty, cheesy tray of lasagna with the caption, "I baked this spinach-turkey sausage lasagne last night after work for family coming to town tonight and I am seeking kudos." And kudos Kaling got, with followers chiming in about how impressive it looked. The recipe, from Epicurious, is a keeper—it uses turkey sausage and spinach to lighten up the perennial favorite, yet still delivers plenty of ooey-gooey comfort.

If you can, it helps to make the tomato sauce a day or two before (it's simple to prepare but needs to simmer for about an hour). When you're ready to assemble the lasagna, you brown the sausage and add the sauce to it; separately, you whisk together cheese, spinach, eggs and some herbs. Then, you begin layering the sauce, noodles, more sauce and the cheese mixture, until you've reached the top of the baking dish. Bake until hot and bubbly, and you've got a winning dish that's guaranteed to happily feed a crowd. Might we suggest George-Foreman grilled s'mores for dessert?
