"Get a Book" Whole Pork Shoulder Recipe
There's a reason old grilling pros love the pork shoulder: It holds moisture so beautifully. All you are left to do is add some sweet and spicy flavor—an apricot-nectar-spiked injection and tangy apricot barbecue sauce are up to the task. It's a major time commitment and you might have to sacrifice some sleep, but barbecuing a whole shoulder is something everyone should do at least once in his life. Oh man, is it worth it!

Grilled Sea Scallops with Tomato–Black Olive Vinaigrette and Potatoes Recipe
When shopping, keep in mind that most sea scallops are fished by boats dragging heavy chains along the ocean floor, damaging fragile habitats in the process. Ask your purveyor for diver-caught scallops, which are gathered by hand and that haven't been treated with phosphates, a practice that bloats scallops by up to 20 percent of their weight.

The Way to Grill a Healthy Steak Recipe
Meat is something to eat less of, yes. But a backyard barbecue just isn't the same without grilled meat of some sort. So at least make the meat you eat as healthy as possible. Look for lean cuts—loins and rounds are good choices. And then try marinating them in beer. Food scientists reported in the Journal of Agricultural and Food Chemistry in 2008 that marinating a steak in beer can reduce the formation of cancer-causing compounds during cooking by as much as 88 percent. (The malt and hops in beer contain antioxidants, compounds that block the formation of carcinogens.) Who says you can't be healthy without sacrificing flavor?
