Serves 4 to 6
1 baguette
1/4 cup chopped parsley
1 large clove garlic, chopped
1 Tbsp. olive oil
3 Tbsp. unsalted butter, softened
1/4 tsp. kosher salt
1/4 cup grated Parmesan cheese, optional
Preheat oven to 350° F.
Slice baguette in half, horizontally, without cutting all the way through.
In a bowl with high sides, combine parsley, garlic, oil, butter and salt. Stir well.
Place bread on a large sheet of foil and spread the mixture evenly on the cut sides. Close the loaf, wrap in foil and bake for 10 minutes. Open the foil and the loaf, and sprinkle with Parmesan (if using). Continue baking until toasted, about 5 minutes.
Cut into slices and serve warm.
