1. Garlic + Truffle Oil + Parmesan
In a small bowl, combine 2 garlic cloves, grated; 2 Tbsp. olive oil and 1 Tbsp. lemon juice. During the last 3 minutes of grilling, baste corn with garlic-lemon oil. Transfer corn to a platter and sprinkle with 3 Tbsp. white truffle oil and 1/2 cup (about 2 ounces) finely grated Parmesan.

2. Barbecue Sauce + Onion + Honey
In a small bowl, combine 1/4 cup smoky barbecue sauce, 3 Tbsp. finely chopped onion, 2 Tbsp. honey and 1/4 tsp. sea salt. During the last 3 minutes of grilling, baste corn with sauce.

3. Butter + Thyme + Sage
In a small bowl, combine 4 Tbsp. unsalted butter, softened; 1 Tbsp. chopped parsley; 1/2 tsp. finely chopped thyme; 1/2 tsp. finely chopped sage and 1/4 tsp. sea salt. Transfer grilled corn to a platter and brush each ear with about 1 tsp. herbed butter.

4. Sour Cream + Lime + Cheese
In a small bowl, combine 1 1/2 cups sour cream, 1 Tbsp. grated lime zest (from about 2 limes), 1/2 tsp. cumin and a pinch of cayenne pepper. Transfer grilled corn to a platter and let cool slightly, about 3 minutes. Spread about 2 Tbsp. sour cream mixture onto each cob. Sprinkle 3/4 cup (about 3 ounces) crumbled Cotija cheese or Pecorino Romano over corn.

5. Maple + Mustard + Bacon
In a small bowl, combine 1/4 cup maple syrup, 2 Tbsp. Dijon mustard and a pinch of allspice. In a large nonstick skillet over medium-high heat, cook 6 slices bacon until crisp, about 6 minutes, and drain on a paper towel–lined plate. Finely chop bacon and set aside on a platter. During last 3 minutes of grilling, baste corn with maple-mustard glaze. Then remove corn from grill and roll in bacon.
