Serves 2


  • 2 boneless, skinless chicken breast halves
  • 1 Tbsp. olive oil
  • Salt and pepper to taste


    Lay a piece of plastic wrap on a cutting board, covering the entire board. Place one piece of chicken on top and cover with another piece of plastic wrap, again making sure to reach the edges of the board.

    Flatten the chicken by pounding with a meat tenderizer, heavy saucepan or can of vegetables or soup. Press slightly outward as you pound to achieve an even thickness. Do not let chicken get thinner than 1/4 inch in width. Remove plastic wrap and repeat with second piece of chicken.

    Heat a large nonstick skillet over medium-high heat. Season chicken with olive oil, salt and pepper on both sides. Cook approximately 3 minutes per side, until it's done to your liking.
