Servings: Makes 8 6-ounce servings
Ingredients 4 cups sliced and peeled champagne peaches or thawed frozen peaches1 cup orange juice2 tablespoons lemon juice1/4 cup peach schnapps8 mint leaves1/2 cup champagne
Place peaches in a blender and puree with orange juice, lemon juice and schnapps. Add the mint and pulse. Pour into a container and stir in the champagne. Chill and serve.
