Chai-Spiced Latte

Photo: John Kernick
Start the day with an aromatic, milky drink, infused with cinnamon, clove, and cardamom. It's inspired by Indian chai, but this has a hint of coffee instead of the usual tea.
Serves 2
Total time: 15 minutes
In a small pan over medium-high heat, bring the milk, clove, cardamom pod, and cinnamon stick to a simmer (you can also use a microwave).
Turn off heat and infuse 5 to 10 minutes.
Warm the milk back up, then use a sieve or a spoon to remove spices.
Pour into two mugs, and stir half the espresso and half the honey or agave nectar into each mug.
Garnish with ground spices if you like, and serve.
