Bruléed Grapefruit Recipe
Grapefruit, that beloved staple of retro diets, is making a comeback. Happily, John Currence—author of the forthcoming cookbook Big Bad Breakfast, named after his restaurant in Oxford, Mississippi—has a trick to elevate the fruit: He sprinkles a little salt on top, along with the usual sugar, and pops it under the broiler. The resulting crème brûlée–esque crust makes the dish taste more like an indulgence than a health food.

Ingredients
2 grapefruits
⅛ tsp. salt
1 Tbsp. sugar
Directions
Total time: 10 minutes
Preheat broiler. Cut grapefruits in half through equator. Sprinkle each cut side with salt and sugar and spread in an even layer.
Place grapefruit cut side up on a baking sheet. Broil, watching carefully and rotating to ensure sugar doesn't burn, until caramelized, 5 to 8 minutes.
Remove from oven, cool briefly, and serve warm.
