Baked Apples Recipe

A baked apple, sprinkled with raisins, unsweetened shredded coconut and antioxidant-rich cinnamon and ginger, is a filling morning meal or dessert. Keep raw apples on hand for snacking during the cleanse; they contain the phytonutrient pectin, which may help lower cholesterol and aid weight loss.
Serves 2
Ingredients
- 2 large apples, such as Pink Lady or Honeycrisp
- 2 Tbsp. raisins
- 2 tsp. unsweetened shredded coconut
- Pinch of ground cinnamon
- Pinch of ground ginger
- Pinch of grated nutmeg
- Pinch of sea salt
Directions
Active time: 5 minutesTotal time: 35 minutes
Preheat oven to 400°. Cut apples around stem and dig out core, making sure not to pierce through bottom. In a small bowl, mix remaining ingredients.
Spoon half of filling mixture into each apple, then add water to fill to top. Transfer apples to a baking dish and bake until soft, but not falling apart, 25 to 30 minutes. Serve warm. Baked apples can be stored in an airtight container in the refrigerator for up to 2 days.
