Serves 4

Ingredients
  • 4 large eggs
  • 3/4 cup milk
  • 3/4 cup all-purpose flour
  • 1 tsp. kosher salt
  • 2 Tbsp. unsalted butter
  • 1 large (8-ounce) red apple, cored and cut into 1/2" slices
  • 1/4 tsp. ground black pepper
  • 1 large scallion, thinly sliced
  • 1/2 cup shredded sharp cheddar

Place a medium or large skillet (preferably cast iron) in the oven and preheat to 450°. Add eggs and milk to a blender, then add flour and salt and blend until smooth.

Once oven is preheated, remove skillet and place on stove top over medium heat. Add 1/2 Tbsp. butter and melt, then add apple slices and season with pepper. Cover and cook until just tender, about 4 minutes. Transfer to a bowl and cover. Add remaining 1 1/2 Tbsp. butter to skillet and swirl to melt and coat sides. Add scallion and cook over high heat for 30 seconds. Add batter and scatter cheese over.

Place skillet in oven and turn down to 425°. Cook until pancake is puffed and browned, about 18 minutes. Place apples over pancake, cut into 4 pieces, and serve.

Try This: For a meatier morning (or evening) meal, add chopped, cooked bacon or sausage to the skillet along with the apples.
