Serves 4

Ingredients
  • 1 orange
  • 1 cup sugar
  • 1 cup pomegranate juice
  • 1 cup seltzer or club soda
  • 1/4 cup fresh pomegranate seeds
  • Small ice cubes

    Directions

    Total time: 30 minutes

    Use a knife to cut skin and white pith off orange in large peels. Place peels in a small saucepan with 1 cup water and sugar and bring to a simmer over high heat. Lower heat and simmer gently for 15 minutes, then let cool. Strain before using. (You'll have more syrup than needed, but once strained, it keeps for a month in the fridge.)

    Cut peeled orange into 8 slices and cut 4 slices in half, forming half moons. Place 1 full and 1 half slice in the bottom of each of 4 (8-ounce) glasses and muddle lightly. Add a couple of small ice cubes to each, followed by 1 1/2 Tbsp. orange peel syrup and ΒΌ cup each pomegranate juice and seltzer, and stir to combine. Add more syrup, juice, or seltzer to taste. Garnish each glass with one halved orange slice and pomegranate seeds.
