Makes 12 balls

Ingredients


  • 1/2 cup almond meal or ground almonds
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened, shredded coconut, plus 2 Tbsp.
  • 2 Tbsp. pure maple syrup
  • 2 Tbsp. lime juice, plus 2 tsp. finely grated zest
  • 1 Tbsp. unsweetened almond milk
  • 10 pitted dates

    Directions

    In a food processor, combine the almond meal, coconut flour, 1/2 cup shredded coconut, maple syrup, lime juice, almond milk and 1 teaspoon of the lime zest, and process for 1 to 2 minutes until a crumbly mass forms. Add the dates and process for 30 seconds to 1 minute, until a sticky but slightly crumbly mass forms.

    In a small bowl, combine the remaining 2 tablespoons of shredded coconut with the remaining 1 teaspoon of lime zest then spread on a large plate.

    Using a tablespoon, scoop the mixture and, with clean slightly wet hands, shape the mixture into a ball between your palms. Roll the ball in the coconut and zest mixture to lightly coat, and set on a plate. Repeat with the remaining mixture until you have 12 balls, each slightly smaller than a golf ball.

    Place the balls in the freezer to set for 30 minutes. Store in the refrigerator until required.
