Chicken and Carrot Stir-Fry with Cauliflower "Rice"
A large head of cauliflower is pulsed and cooked with chicken and carrots in a sweet and gingery sauce of soy sauce, toasted sesame oil, salt and black pepper. Top with scallions and roasted cashews for a hearty weeknight meal.
