If you don't have a panini maker, you can get the same results by covering a brick or stone with foil to press your panini atop a heavy skillet or griddle. In this case you will need to flip your sandwich over to cook both sides. Cook time is usually 1 to 2 minutes per side. If you are using a panini machine, then it should take 4 to 5 minutes to achieve a toasty golden brown. Servings: Serves 4

DirectionsPreheat your panini machine on high heat or your griddle or pan on low-medium heat for 5 minutes.
Brush the bread on both sides with olive oil. For each panini sandwich, spread the inside of the first slice of bread with 1 teaspoon of mustard and the other slice with 1 teaspoon of mayonnaise. Top the first slice of bread with a slice of cheese, 2 slices of turkey, grilled veggies, salt and pepper to taste and 2 basil leaves. Finish the sandwich with the second slice of bread. Place the sandwich in the heated panini machine and grill for 4 to 5 minutes until the cheese is completely melted and the bread is toasted. Remove the panini sandwich and place it on a cutting board. Use a serrated knife to cut it in half.
