Ingredients
  • 2 Tbsp. fresh lemon juice
  • 1/2 cup mayonnaise
  • 1/2 cup bottled roasted red peppers , drained and chopped
  • 2 cans (6 ounce each) packed in water light tuna , drained and rinsed
  • 10 kalamata (brine-cured) black olives , pitted and chopped
  • 1 large celery rib , chopped
  • 1 scallion , finely chopped
  • 2 Tbsp. Italian parsley , chopped
  • 1 tsp. caraway seeds
  • Salt and black pepper , to taste
  • 1/4 cup toasted pignolis (pine nuts), for garnish
  • Crackers or baguette slices , for serving
  • Directions
    Whisk together lemon juice and mayonnaise in a bowl. Add remaining ingredients and
    combine. Season with salt and pepper. Garnish with toasted pine nuts. Tuna salad can be
    served with crackers or baguette slices.
