- 2 Tbsp Olive oil
- 4 Shallots, thinly sliced
- 1 lb frozen corn
- 1/2 tsp salt
- 1/4 tsp sugar
- 1/4 tsp ground paprika
- 2 Tbsp fresh flat leaf parsley, chopped
- (Optional: bacon, cooked and chopped)
Heat olive oil in a pan over medium-high heat.
Add shallots and cook for about 30 seconds.
Add corn, salt, sugar, and paprika, and cook for about 8 to 10 minutes, stirring occasionally.
Take off heat and stir in chopped parsley. (If using, add bacon bits.)
