Sausage, spices and a hint of cottage cheese come together with boxed cornbread mix to make these delicious and easy to make muffins. Serve as a side or a hearty meal your family can eat on the go.
Ingredients
1 package of instant cornbread muffin mix
1/2 pound spicy pork sausage, ground
1 tablespoon butter, softened
1/2 yellow onion, diced,
1 cup sharp cheddar cheese, shredded
1/4 cup lite cottage cheese
2 teaspoons spicy seasoning salt
2 teaspoons Cajun spice mix
2 teaspoons garlic powder
Directions
Preheat oven to 375°.
In a medium-mixing bowl, combine the ground sausage, diced onion and spices together and mix thoroughly using a wooden spoon or your hand.
Place a medium sized pan on the stovetop over medium-high heat. Melt the butter in the pan, and add the ground meat mixture. Stir constantly until the entire batch is cooked through.
Taste the spicy pork to see if desired flavor is achieved. Season lightly if necessary until satisfied, then set aside.
In a medium-mixing bowl, prepare the cornbread muffin mix according the box's instructions. Add cheddar and cottage cheese to the muffin batter and mix thoroughly.
Line a muffin tin with muffin-wrappers and fill each wrapper half full with the cornbread batter. Spoon a small portion of the ground pork into the center of each muffin then pour more batter on top of the pork, filling the muffin wrapper to the top.
Place tray in the oven and bake until muffins are puffed and beginning to brown, (about 18 minutes).
Use a toothpick to puncture the center of the muffin, if it comes out clean then it is fully baked.
Remove from the oven and allow to cool for about 10 minutes. Serve warm.
