Lobster Rolls

Your picnic menu doesn't have to be just burgers and hot dogs—take your backyard dining to a higher level with these tasty, simple seafood sandwiches.

Servings: Serves 4
Ingredients
  • 4 pounds lobster (1 pound per person), cooked and diced
  • 4 tablespoons diced onion
  • 4 stalks celery , diced
  • 4 tablespoons low-fat mayonnaise (or mayonnaise-type salad dressing)
  • 8 dashes hot sauce
  • Salt and pepper to taste
  • 4 sandwich rolls   or hot dog buns
Directions
In a bowl, combine the lobster, onion, celery, mayonnaise, hot sauce and salt and pepper. Toss all ingredients until coated with the mayonnaise. Spoon into sandwich rolls and serve.
