Ingredients


1 Tbsp. vegetable oil
2 large, ripe peaches
16 slices country ham or prosciutto (each 3" x 2" and as thin as you can get it)
½ cup (3 ounces) fresh goat cheese
¼ cup buttermilk
¼ tsp. kosher salt
¼ tsp. cayenne pepper
3 Tbsp. balsamic vinegar

Directions


Preheat oven to 500°. Drizzle a baking sheet with vegetable oil, heat in oven, and remove it just before oil is smoking, about 15 minutes. Meanwhile, cut each peach into 8 wedges. Wrap each wedge with a slice of ham.

In a blender, puree goat cheese, buttermilk, salt, and cayenne until smooth.

Carefully place wrapped peaches on hot baking sheet in a single layer and return to oven. Roast 5 minutes, or until ham shrinks and starts to brown. Remove pan from oven and drizzle with balsamic vinegar. Serve with goat cheese sauce for dipping.
