Ingredients

  • 1/4 cup molasses
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 3 tablespoons light brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons granulated garlic
  • 2 tablespoons granulated onion
  • 1 tablespoon allspice
  • 1 tablespoon cayenne pepper
  • 1 teaspoon crushed red pepper flakes
  • 1 scotch bonnet
  • 2 tablespoons sliced peeled fresh ginger
  • 1 onion, sliced
  • Pink Himalayan salt and freshly ground black pepper
  • 6 whole turkey wings (about 1 1/4 pounds)
  • 5 stalks celery, cut into chunks
  • 2 carrots, thinly sliced
  • 1 red bell pepper, thinly sliced
  • Good-quality chicken broth, as needed
  • Edible flowers, for garnish, optional

Directions

Combine the molasses, olive oil, lime juice, orange juice, brown sugar, soy sauce, granulated garlic, granulated onion, allspice, cayenne pepper, red pepper flakes, scotch bonnet, ginger,half of the onion and a big pinch each of salt and black pepper in a blender and blend until smooth.

Place the wings in a large bowl and pour the marinade over them. Toss to make sure they are well coated. Transfer the wings and marinade to a 2-gallon resealable plastic bag. Add the celery, carrots, bell pepper and remaining 1/2 onion, then seal the bag and turn to coat. Put the bag on a plate in case of leaks and marinate in the refrigerator for at least 2 hours and up to 24 hours.

Preheat the oven to 350 degrees F and fit a wire rack inside a rimmed baking sheet.

Remove the turkey wings from the marinade (reserve the marinade) and place on the prepared baking sheet. Roast until deep golden brown and an instant-read thermometer inserted into the thickest part registers 165 degrees F, about 1 1/2 hours.

Transfer the turkey wings to a baking dish and pour enough of the reserved marinade over the top to come halfway up the sides, adding some chicken broth if you don't have enough marinade. Be sure to also add all the vegetables from the marinade. Cover the dish tightly with aluminum foil. Reduce the oven temperature to 300 degrees F and cook for 1 1/2 hours. Remove the foil and continue to cook until the wings are crisp, about 20 minutes more.

Place the turkey wings on a serving plate, garnish with edible flowers and serve the cooked marinade and vegetables in a bowl on the side.
